Giorgio was a blacksmith with a lifelong passion for mechanics. This led him to start manufacturing gut-cleaning machines, pig-dehairing machines, and tubular guide rails—the latter covered by a patent he held.
Then, one day, a friend who owned a small meat-processing plant asked him to develop a machine for bind coppa and pancetta. Giorgio enlisted the help of his son, who was studying engineering at the time. Together, they designed the machine on a drafting table in the basement of their home, as the company’s office was too small. More than 250 units were eventually made, many of which are still in use today.
The year was 1976. Fifty years have passed since then—half a century of history, change, and memories.

Two years later, in 1978, Fava Giorgio took part in Eurocarne in Verona for the first time, showcasing a range of machines for processing coppa and pancetta: from dry salting to shaping and stuffing, right through to tying and piercing. The booth was modest, but the success was as remarkable as it was unexpected.
Fava Giorgio first exhibited at the IFFA trade show in Frankfurt in 1986. In 1990, the company merged with Axel Ingegneria Alimentare to form Fava Giorgio Axel.

Over the years, the company has expanded its range of applications to include not only coppa and pancetta, but also cooked ham, salami, cheese, fresh meat, deli products, and vegan items. Fava Giorgio Axel’s machines and systems cover every stage of the process, from production and portioning to handling and packaging.
