By making deep, parallel, and alternating cuts on opposite sides of the meat, the CARVE MACERATOR facilitates the extraction of water-soluble proteins. This process increases brine absorption capacity and significantly reduces massaging time.

The specialized shape and size of the blades, combined with adjustable rotation speeds, prevent connective tissue (aponeuroses) from accumulating on the cutting edges, ensuring consistent, high-quality results throughout the entire shift.
The ILS CARVE MACERATOR automatically adapts to product dimensions, featuring pneumatically adjustable roller pressure to control cutting depth and maximize the protein extraction surface.
The blade rollers are easily interchangeable. This allows for exclusive surface treatments on high-quality products, locally increasing protein extraction to promote muscle binding and enhance firmness.
Additionally, a dedicated plastic roller is available for processing products with rind.
The tenderizer is also ideal for fresh poultry—particularly small cuts—to facilitate direct brine absorption inside the drum.
Built entirely from stainless steel and food-grade plastics, the ILS CARVE MACERATOR guarantees maximum safety and effortless sanitization.
This compact machine features a product passage width of either 400 mm or 600 mm and is fully compatible with all injectors.
The customizable discharge system can unload products either directly into containers or onto a conveyor belt.
